*Ingredients:*


- 2 cups cooked and cooled jasmine rice (preferably day-old)

- 2 tablespoons vegetable oil

- 2 eggs, lightly beaten

- 1 cup mixed vegetables (peas, carrots, corn), frozen or fresh

- 3 green onions, finely chopped

- 3 tablespoons soy sauce

- 1 teaspoon sesame oil (optional)

- 1/2 teaspoon garlic powder (optional)

- Salt and pepper to taste

**Step 1: Prepare Ingredients**

Ensure all your ingredients are prepped and ready before starting. Having pre-cooked and cooled rice is essential for the best texture.


**Step 2: Heat the Pan**

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil.


**Step 3: Scramble Eggs**

Pour the lightly beaten eggs into the heated pan. Allow them to set for a few seconds, then gently scramble with a spatula until just cooked. Remove the scrambled eggs from the pan and set aside.
