*Ingredients:*

**For the Crust:**

- 1 cup graham cracker crumbs

- 4 tablespoons unsalted butter, melted

- 2 tablespoons granulated sugar

- 16 oz (2 packages) cream cheese, softened

- 1/2 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1/2 cup condensed coconut milk

- 1 cup crushed pineapple, drained

- 2 tablespoons granulated sugar

**Step 1: Preheat the Oven**

Preheat your oven to 325°F (163°C). Line a mini muffin tin with paper liners.


**Step 2: Make the Crust**

In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated with butter.
